I had a hankering for hash browns, and my lovely P suggested we make them for breakfast this weekend. We found a recipe in my trusty Cook’s Companion by Stephanie Alexander. Like every other recipe we’ve tried, it worked perfectly. P went across to the South Melbourne Market potato stall and bought Nicola potatoes on their advice (best for frying apparently). They were coarsely grated into a bowl of water and dried (I squeezed all the water out of them with a clean Chux), mixed with 20g melted butter per large potoato and lashings of salt and pepper, and fried.
Yum.
Very good. Especially when they’re fresh. And lovely with bacon, eggs, vine ripened tomato & portobello mushrooms. We ate that outside on our little terrace, and it was divine.
